Allspice is the fruit of a tree called Pimenta dioica, which is green when picked and takes on its familiar brown color once dried. Allspice has a hard texture, a distinctive aroma and a peppery flavor, resembling black peppercorns in appearance. Its aroma is reminiscent of a blend of cloves, cinnamon and nutmeg, which is why it's called "allspice" in English — as if it were all the spices combined — and it's used mainly in braised dishes.
Allspice pairs well with all braised pot dishes. Try it in meat soups and certain dessert recipes. Crush a few berries and add them to hot chocolate. Use it to make pickles, flavored oils, chutneys, marinades, white sauces and barbecue sauces.
